1 12-ounce boneless, skinless chicken breast, cut into
1/2" cubes
1/4 cup chopped onion
1 clove garlic, minced
1 tsp. lime juice
3/4 tsp. ground cumin
1/4 tsp. chili powder
1/4 tsp. dried oregano |
1/8 tsp. pepper
2 Tbs.. ketchup
4 soft tortillas
1 cup shredded lettuce
1 cup chopped tomato
12 cup shredded low fat Cheddar cheese
14 cup chunky salsa |
| In 1-quart casserole dish, combine
chicken, onion, garlic, lime juice, cumin, chili powder, oregano, and pepper. Mix well.
Microwave on high for -4 minutes, or until chicken is cooked through, stirring after every
minute. Stir in ketchup. Spoon 14 of the chicken into each tortilla. Top each with
lettuce, tomato, Cheddar cheese, and salsa. Nutritional Analysis Per
