Chicken Tacos

1 12-ounce boneless, skinless chicken breast, cut into 1/2" cubes
1/4 cup chopped onion
1 clove garlic, minced
1 tsp. lime juice
3/4 tsp. ground cumin
1/4 tsp. chili powder
1/4 tsp. dried oregano
1/8 tsp. pepper
2 Tbs.. ketchup
4 soft tortillas
1 cup shredded lettuce
1 cup chopped tomato
12 cup shredded low fat Cheddar cheese
14 cup chunky salsa
In 1-quart casserole dish, combine chicken, onion, garlic, lime juice, cumin, chili powder, oregano, and pepper. Mix well. Microwave on high for -4 minutes, or until chicken is cooked through, stirring after every minute. Stir in ketchup. Spoon 14 of the chicken into each tortilla. Top each with lettuce, tomato, Cheddar cheese, and salsa.
